Ginger-Lime chicken slaw
Ginger poached chicken with Asian slaw, daikon noodles and peanuts

To maximise freshness put the cooked chicken straight in the freezer on arrival. Defrost when needed in minutes in the microwave.
- For best results, remove tray of slaw & daikon noodles from refrigerator 10 minutes before preparing so they come up to room temperature
- Transfer the chicken to a microwavable bowl. Cover with plastic wrap and microwave on high for 2 minutes until piping hot
- Tip the slaw, daikon noodles, warm chicken, peanuts and lime rice wine vinegar dressing into a large mixing bowl
- Toss all ingredients together to mix well land divide the slaw mix between 2 plates

Light, tasty and easy to prepare - doesn't get better than that.
This dish was tasty but I would save it for a warmer days lunch. It was on the lighter side but very flavorful and colorful.

I actually brought this to work and had it for lunch 2 days in a row. The texture was wonderful both days and the taste was light and refreshing and the perfect summer lunch. Lots of spice and quite the kick. Definitely not going to put you in a post lunch stupor.
This was so tasty and delicious! Spicy and loved the kick of ginger… So healthy and super easy weekday dinner option. I will do this again and often! Great job G&T!!
