To maximise freshness put the cooked chicken straight in the freezer on arrival. Defrost when needed in minutes in the microwave.
- For best results, remove tray of slaw & daikon noodles from refrigerator 10 minutes before preparing so they come up to room temperature
- Transfer the chicken to a microwavable bowl. Cover with plastic wrap and microwave on high for 2 minutes until piping hot
- Tip the slaw, daikon noodles, warm chicken, peanuts and lime rice wine vinegar dressing into a large mixing bowl
- Toss all ingredients together to mix well land divide the slaw mix between 2 plates

This salad is fresh, crisp and flavorful. Great as a meal but makes a wonderful side dish as well.

A new favorite and couldn't be easier. Heat the chicken and toss everything. This is very refreshing and filling. I added a little chopped papaya sprinkled with lime juice and Trader Joe's chili lime spice. This will be especially desirable in the warm weather.
I literally say, "I'm gonna have a Big Salad today." I love all the components and the fact that there is crunchiness, sweetness, peanuts are a little salty. Great job. I am not a huge fan of the dressing so I usually use my o/v with a drizzle of tahini OR use up one of the dressings that come with another meal...I can't remember which one it is but I believe it has ginger in it. (P.S., it's meant to be shared, but, whatevs).
